Wrap a cleaned mackerel in foil after wiping it with olive oil, some seasoning and brown sugar and sliced cucumber. Dump it on the BBQ for 5 minutes maximum and enjoy.

My favourite burger is to use some thin cut steak, wiped with garlic, and cooked for a minute or so. Perfect every time.

I love the thrill of using my own charcoal. Just throwing some bacon on the grill for less than 60 seconds with a bap heating in the corner works for me.

You mentioned corn on the cob on your website. How it is BEST done is to cook in foil as you say, then remove the foil and season with some fine salt then allow to almost blacken on the grill. It is dead good and DO NOT melt butter over it afterwards. Love your burger recipe though shall avoid pointing it for Weight Watchers due to the cheese content.

Season some lamb chops, toss them on and when they look cooked but still a bit bloody, eat them. BBQ heaven.

This will sound silly but some milk, in a fireproof container, is wonderful when gently heated on safe BBQ charcoal. It gets a nice smoked flavour. (Note from Admin. We have not tried this one.)

Fry an onion with three crushed garlic cloves in some olive oil. Toss in a couple of spoonfulls of brown sugar. Add a couple of spoons of soya sauce and a big dollop of tomato sauce - almost a bottle full. Bring to the boil them simmer for a few minutes. Makes an excellent dip or glaze to coat spare ribs, chicken, or even sausages.

Season pork chops, cook briefly to colour each side then glaze with honey and let them cook properly. Re-glaze with honey - the blackened bits are so tasty. Oh, it's GREAT doing this with my own home produced charcoal. Thanks again.

Take uncooked gammon steaks put them onto foil (or in a pan with a lid) and then break up some star anise and stick the bits into the gammon (as you might do with chives) and then smother with liberal amounts of honey. Close the foil so that it won't leak and then cook for 5/6 mins over the hot part of the bbq then gently cook over a cooler part until done. Timing depends on the performance of your bbq and on the size/thickness of your gammon.
